What does Scott eat?
So before I get into the details, let me get the legal hoo ha out of the way. ;) Neither of us are dietitians, nutritionist, etc, blah blah blah (but we would both like to do the eCornell plant based certification in the near future!) and most people you hear from online aren't either, just something to keep in mind (don't believe everything you read!)
After almost 5 years of eating a vegan diet, this is what Scott has found to work for him.
*Disclamer: He/we eat weird. We always have, even before we went vegan. We don't eat weird "because" we're vegan, we just eat weird. Pre-vegan Scott would be happy going to work with a can of salmon or a chicken breast baked in salsa (the only way I knew how to cook it) and a can of green beans. Now we know better. ;) (And can I just say how happy I am to not have to cut up slimy chicken breasts every week to cook for lunches!?)
So here's what a typical day looks like!
So this about sums up Scott's diet! He pretty much eats this on the daily during the week, and the weekends change depending on if and where we go out to eat or what we have going on that weekend. I hope this helps everyone who's been asking me "What does Scott eat?"
