Mock Tuna Salad
2 cans chick peas, drained & rinsed
1 small red onion, diced
3 scallions, thinly sliced
2 Tbsp capers
1 Tbsp fresh chopped dill
1/4 cup chopped walnuts
3 Tbsp grapeseed Vegenaise
Sea Salt & pepper to taste
Using a food processor grind chickpeas to small flaky pieces. Add to a bowl with remaining ingredients and mix well. Season with sea salt and pepper. You can also use a potato masher to mash the chickpeas instead of the food processor (much quicker and clean up is easier!).
Sometimes we'll put this between two whole wheat sandwich thins with some bread and butter pickles (just make sure there's no high fructose corn syrup in the pickles) then press it in our George Foreman (a panini press would work, too.) Can also be served with whole grain crackers or on a bed of lettuce (pictured above with alfalfa sprouts).
